A refreshing change to regular coleslaw.

 

Cooking directions

  • Combine cabbage, celery, mandarin and parsley in serving bowl.
  • To make dressing, mix or blend yoghurt, juice, rind and mustard.
  • Drizzle dressing over cabbage mixture.

Try:

  • Using oranges or tangelos instead of mandarins.
  • Using red cabbage to make a colourful salad.
  • Adding spring onion or chives.

Ingredients

3 cups cabbage, finely chopped or shredded

1 cup celery, finely sliced

1 cup mandarin segments

1/4 cup parsley

1/4 cup natural low-fat yoghurt

2 tablespoons mandarin juice

1/2 teaspoon grated mandarin rind

1/2 teaspoon dry mustard powder
