Preparation time: 20 minutes

These tasty fold ups will impress whānau, family and friends. Suited to all sorts of vegetables.

 

Cooking directions

  • Cut each pastry sheet into eight triangles.
  • Place pastry triangles on baking trays.
  • Spread the tomato paste over the pastry.
  • Top with sliced pepper, courgette and tomatoes.
  • Fold the corners of the pastry inward and sprinkle with a little cheese before baking.
  • Bake at 200°C for 10 to 12 minutes or until nicely browned.

Tips:

  • Try adding some canned chilli beans and frozen corn for a Mexican flavour.
  • Use any vegetables you have on hand - canned corn, frozen peas, sliced mushroom, chopped leftover cooked broccoli, etc

1/2 red pepper, chopped

1 courgette, thinly sliced

2 tomatoes, sliced
