Veggie fold ups
Preparation time: 20 minutes
These tasty fold ups will impress whānau, family and friends. Suited to all sorts of vegetables.
Cooking directions
- Cut each pastry sheet into eight triangles.
- Place pastry triangles on baking trays.
- Spread the tomato paste over the pastry.
- Top with sliced pepper, courgette and tomatoes.
- Fold the corners of the pastry inward and sprinkle with a little cheese before baking.
- Bake at 200°C for 10 to 12 minutes or until nicely browned.
Tips:
- Try adding some canned chilli beans and frozen corn for a Mexican flavour.
- Use any vegetables you have on hand - canned corn, frozen peas, sliced mushroom, chopped leftover cooked broccoli, etc
