Vegetable kebabs
Preparation time: 20 minutes
Great for a summer barbeque! This is a fun, easy way to serve vegetables. The kids can help, and you don’t really need to follow a recipe!
Cooking directions
- Use any combination of vegetables: onions, new potatoes (or potatoes cut into small wedges), eggplant, courgettes, red, yellow or green peppers, tomatoes, mushrooms.
- Cut vegetables into bite-sized pieces. And if using potatoes, boil for 7 to 9 minutes.
- Thread the vegetables onto kebab sticks. (If using bamboo kebab stick, soak in water for about 30 minutes to prevent from burning.)
- Make basting mixture – combine oil, juice, soy sauce and garlic.
- Brush with the basting mixture.
- Barbecue or grill for 8 to 10 minutes, turning and brushing with the basting mixture frequently. Cooking time will depend on the size of the pieces of food and the heat of the grill or barbecue.
- Cook until golden brown and vegetables are tender.
Try:
- Adding bite-sized chunks of chicken, beef, pork, lamb, fish, frankfurter or sausage. By using lots of vegetables you can make a little meat go a long way.
