A refreshing healthy dessert.

 

Cooking directions

  • Peel the mangoes and remove the flesh from the stones. Cut into pieces (similar in size to canned peaches).
  • Using a sharp knife remove the skin from the pineapple. Remove the core and chop the flesh into small pieces.
  • Peel the bananas and kiwifruit and chop into bite-sized pieces.
  • Rinse the strawberries and cut in half.
  • Combine all the fruit in a large bowl.
  • Add the fruit juice and coconut cream.
  • Transfer to a serving bowl and sprinkle with mint.
  • Cover and chill in the refrigerator for at least an hour before serving.
  • Serve on its own or with yoghurt.

Try:

  • Using a tin of peaches in natural juice instead of mangoes.
  • Tinned mangoes instead of fresh.
  • Using any fresh or tinned fruit you have available – invent your own favourite combination.

10 strawberries

3/4 cup orange and mango fruit juice

1/4 cup low-fat coconut cream, optional

1 teaspoon mint, finely chopped
