Tropical fruit salad
Preparation time: 40 minutes
A refreshing healthy dessert.
Cooking directions
- Peel the mangoes and remove the flesh from the stones. Cut into pieces (similar in size to canned peaches).
- Using a sharp knife remove the skin from the pineapple. Remove the core and chop the flesh into small pieces.
- Peel the bananas and kiwifruit and chop into bite-sized pieces.
- Rinse the strawberries and cut in half.
- Combine all the fruit in a large bowl.
- Add the fruit juice and coconut cream.
- Transfer to a serving bowl and sprinkle with mint.
- Cover and chill in the refrigerator for at least an hour before serving.
- Serve on its own or with yoghurt.
Try:
- Using a tin of peaches in natural juice instead of mangoes.
- Tinned mangoes instead of fresh.
- Using any fresh or tinned fruit you have available – invent your own favourite combination.

1/4 cup low-fat coconut cream, optional
1 teaspoon mint, finely chopped
