Tomato couscous salad
Preparation time: 10 minutes
Couscous is quick, easy and delicious! Great with any meal, especially a summer barbeque.
Cooking directions
- Put couscous and water in bowl. Cover and soak for about 5 minutes (until water is completely absorbed).
- Add all other ingredients to couscous and gently stir to combine.

1 cup couscous
1 cup boiling water
5 tomatoes, chopped
1 cup parsley, chopped
1/4 cup fresh mint leaves, chopped
2 cloves garlic, crushed
3 tablespoons lemon juice
1 tablespoon olive oil
1 pinch ground black pepper
