Tomato and cucumber salad
Preparation time: 15 minutes
This is a subtle flavoured salad which tastes best when you use the light green leaves from the middle of the celery bunch.
Cooking directions
- Place tomatoes, cucumber and celery leaves/stalks into a bowl or serving platter.
- To make dressing, mix together cider vinegar, oil, whole seed mustard and brown sugar.
- Pour dressing over salad and toss gently just before serving.

6 medium tomatoes, cut into wedges
2 cups cucumber chunks
1 cup celery leaves, or celery stalks finely sliced
1 tablespoon cider vinegar
1 tablespoon oil
2 teaspoons whole seed mustard
1 tablespoon brown sugar
