A tasty easy salad - perfect for summer meals.

 

Cooking directions

  • Chop chicken into small bits.  Cook on non-stick frying pan with a little garlic and black pepper. Put aside to cool.
  • Put bag of salad mix into a large salad bowl.
  • Add cooked chicken, chickpeas, tomatoes, cucumber and onion. Gently mix.
  • Drizzle over dressing just before serving.

An easy dressing to add zing to your salads: mix lemon juice, crushed garlic and ginger, herbs and a little olive oil.

Tips:

  • Lamb or beef are tasty alternatives to chicken.
  • If buying salad dressing, choose a low-fat one.
  • Add any other salad ingredients you like - sliced red pepper, crumbled feta, drained and rinsed canned corn, chopped spring onion, chopped nuts, seasame seeds, pumpkin seeds, etc.

400 grams chicken

1 bag green salad mix

2 tomatoes, chopped

1/2 cucumber, chopped

1 small red onion, sliced (optional)

1 can chickpeas, drained and rinsed (optional)
