Tasty chicken salad
Preparation time: 20 minutes
A tasty easy salad - perfect for summer meals.
Cooking directions
- Chop chicken into small bits. Cook on non-stick frying pan with a little garlic and black pepper. Put aside to cool.
- Put bag of salad mix into a large salad bowl.
- Add cooked chicken, chickpeas, tomatoes, cucumber and onion. Gently mix.
- Drizzle over dressing just before serving.
An easy dressing to add zing to your salads: mix lemon juice, crushed garlic and ginger, herbs and a little olive oil.
Tips:
- Lamb or beef are tasty alternatives to chicken.
- If buying salad dressing, choose a low-fat one.
- Add any other salad ingredients you like - sliced red pepper, crumbled feta, drained and rinsed canned corn, chopped spring onion, chopped nuts, seasame seeds, pumpkin seeds, etc.

400 grams chicken
1 bag green salad mix
2 tomatoes, chopped
1/2 cucumber, chopped
1 small red onion, sliced (optional)
1 can chickpeas, drained and rinsed (optional)
