250 grams surimi, chopped

1/2 cucumber, chopped

3 spring onions, sliced

1 cup bean sprouts

1/2 cup parsley, chopped

1/2 cup low-fat coconut milk

3 lemons, juice 2 of the lemons and cut 1 into wedges
