A modern take on traditional kaimoana.
Cooking directions
- Mix all ingredients together in serving bowl.
- Cover and chill in fridge.
- Serve with lemon wedges.

Ingredients
250 grams surimi, chopped
1/2 cucumber, chopped
3 spring onions, sliced
1 cup bean sprouts
1/2 cup parsley, chopped
1/2 cup low-fat coconut milk
3 lemons, juice 2 of the lemons and cut 1 into wedges
