Roastie wraps
Preparation time: 20 minutes
Two family favourites - roast veggies and wraps! Roastie wraps are great hot or cold. Like the salad wraps they are perfect for lunch boxes – and a great way to get your 5+ a day.
Cooking directions
- Heat oil gently in a non-stick fry pan.
- Add pepper, onion, carrot and kumara, cover with lid, and gently cook for 15 minutes or until tender. Add 1 to 2 tablespoons of water during cooking if the pan dries out.
- Spread both tortilla with cream cheese.
- Place cooked vegetables on top of both pieces.
- Roll up firmly.
- Cut in half and serve.
Tip:
- Add cooked chicken or bacon for a change.
- Use hummus or pesto instead of cream cheese.

1 small onion, sliced
1 carrot, cut into sticks
1 small kumara, cut into sticks
2 tortillas, wholemeal wraps or burritos
2 tablespoons low-fat cream cheese
