Roast chicken is an easy and tasty family favourite. Perfect for a family dinner or special occasion.

 

Cooking directions

  • Preheat oven to 180 degrees.
  • Make stuffing: Mix together onion, breadcrumbs, mixed herbs, parsley, egg and garlic.
  • Press the stuffing loosely into the cavity of the chicken and secure opening with toothpicks or a bamboo skewer.
  • Put 1 tablespoon of flour in oven bag and shake to cover inside of bag.
  • Place chicken in an oven bag. Cooking the chicken in an oven bag shortens the cooking time and will ensure the chicken remains moist.
  • Roast chicken as instructed on the oven bag box. Usually about 25 minutes per 500 grams plus 20 minutes. Chicken is cooked when juices run clear.
  • Serve with gravy, new potatoes or perfect roast vegetables, and steamed vegetables.

To make gravy:

  • In a saucepan, stir gravy mix into 1/2 cup water. Add remaining water. Whisk so there are no lumps.
  • Slowly bring to the boil. Stir often. Reduce heat and simmer for 2 minutes.

Ingredients

1 size 18 whole chicken (fresh or frozen), thawed, neck and giblets removed

1 medium onion, finely chopped

3 cups fresh breadcrumbs

3 teaspoons dried mixed herbs

1 handful fresh parsley, chopped (optional)

1 egg

2 cloves garlic, crushed

2 tablespoons instant gravy mix

2 cups water

1 tablespoon flour
