One-pot chicken and rice

Preparation time: 40 minutes

An easy family meal in one pot. And, it's a money saver too costing under $20!

 

Cooking directions

  • Cut chicken into pieces.
  • Heat oil in large saucepan. Add chicken pieces. Cook for a minute or two until brown.
  • Add onion, garlic, spices and rice. Cook for another minute or two.
  • Add canned tomatoes, water and carrots.
  • Cover and simmer on a low heat for around 20 minutes. Stir regularly so it doesn't stick to the bottom of the saucepan.
  • Add frozen peas and corn.  Cook for another 5 minutes.
  • Serve with green salad, winter slaw or steamed broccoli.

Try:

  • Using any combination of vegetables you have on hand - fresh, frozen or canned.
  • Adding some chopped celery and sliced red pepper.
  • Using a canned fish instead of chicken.
  • Adding a can of drained chickpeas.

Ingredients

400 grams chicken, skin removed

2 tablespoons oil

1 large onion, chopped

3 cloves garlic, crushed

1 teaspoon tumeric

1 teaspoon cumin, optional

1 1/2 cups long-grain rice

1 can chopped tomatoes (410g can), Italian-seasoned tomatoes work well

1 1/4 cups water

3 carrots, sliced

1 cup frozen peas

1 cup frozen or canned corn
