Oka i'a (raw fish)
Preparation time: 2 hours, 30 minutes
A Pacific favourite. Great for those summer celebrations.
Cooking directions
- Rinse the fish and cut into cubes.
- Place in a shallow dish and cover with lemon juice.
- Leave to marinate for at least 2 hours, or overnight in the fridge.
- Drain off the lemon juice.
- Add the spring onions, cucumber, tomatoes, pepper, coconut cream and water.
- Sprinkle with pepper and mix well.
- Transfer to a serving bowl.
- Cover and chill before serving.
- Serve with green salad.

Ingredients
1 kilogram fresh fish fillets, mullet or gurnard is best
5 lemons, juiced
3 spring onions, chopped
1 cucumber, diced
2 tomatoes, chopped
1 red pepper, sliced (green or yellow peppers work well too)
1 1/2 cups low-fat coconut cream
1 cup water
1 pinch ground black pepper
