Preparation time: 30 minutes

Double the recipe and freeze some for another meal.

 

Cooking directions

  • Heat the oil in a large saucepan.
  • Add the onion, bacon and kumara.
  • Cook on a medium heat for about 5 minutes until the bacon is brown and the onion is transparent.
  • Add the water and simmer gently for 15 to 20 minutes or until the kumara is soft.
  • Mash with a potato masher or fork to break up the kumara.
  • Add the milk and mint.
  • Gently reheat until hot.
  • Serve with wholegrain rolls or toasties.

2 small kumara, peeled and diced

3 cups water

1 cup trim milk

2 tablespoons mint, finely chopped
