Minted kumara soup
Preparation time: 30 minutes
Double the recipe and freeze some for another meal.
Cooking directions
- Heat the oil in a large saucepan.
- Add the onion, bacon and kumara.
- Cook on a medium heat for about 5 minutes until the bacon is brown and the onion is transparent.
- Add the water and simmer gently for 15 to 20 minutes or until the kumara is soft.
- Mash with a potato masher or fork to break up the kumara.
- Add the milk and mint.
- Gently reheat until hot.
- Serve with wholegrain rolls or toasties.

2 small kumara, peeled and diced
3 cups water
1 cup trim milk
2 tablespoons mint, finely chopped
