Mini pizzas
Preparation time: 15 minutes
A snack-sized version of a family favourite. You can freeze these mini pizzas so you have quick snacks on hand. Good for the school lunchbox too.
Cooking directions
Possible toppings:
- Tinned spaghetti, sliced onion, tinned pineapple chunks (drained), sliced tomato, sliced red or green pepper, sliced mushrooms.
- Chilli beans, tinned corn (drained), sliced green pepper, sliced tomato.
- Sliced tomato and sliced mushroom.
- Creamed corn and sliced tomato.
- Invent your own yummy combination.
To make:
- Spread your chosen pizza base with tomato paste (or tomato sauce) and sprinkle over dried herbs.
- Place toppings on pizza base.
- Sprinkle over a little grated cheese.
- Grill in hot oven until cheese has melted.
Try:
- Making the night before and having as a lunchbox snack the next day.

Ingredients
4 slices wholegrain bread, pita bread or muffin splits
2 cups healthy toppings
1/2 cup grated cheese
4 tablespoons tomato paste, or tomato sauce
2 teaspoons dried mixed herbs
