Preparation time: 30 minutes

A new twist on an old favourite. Use any combination of veggies that you have on hand - fresh, frozen or canned.

 

Cooking directions

  • Fill large saucepan with water, bring to the boil. Add macaroni and simmer for 7 minutes.
  • Chop cauliflower and broccoli into small pieces. Add to the pasta and simmer for another 3 to 4 minutes. Drain.
  • While pasta is cooking, melt margarine is a saucepan.
  • Add chopped onion and cook for 3 to 4 minutes until soft.
  • Add flour and mix well. Gradually add milk. Heat gently until thickened, stirring to avoid lumps.
  • Add the cheese. Stir.
  • Add macaroni and vegetable mix to large baking dish.
  • Pour over cheese sauce.
  • Top with sliced tomato and crushed weetbix.
  • Grill for 5 to 10 minutes until golden brown.
  • Serve with steamed veggies, salad or winter slaw.

Try:

  • Adding a can of tuna to the cheese sauce for a tuna pasta bake.
  • Using frozen or canned vegetables - use any veggies you have on hand.
  • Using different combinations of vegetables - sliced carrots, corn and peas would make a colourful meal.

2 cups macaroni

1/4 small cauliflower, about 200 grams

1/2 head broccoli, about 200 grams

2 tablespoons margarine

1 onion, chopped

3 tablespoons flour

3 cups low-fat milk

1 cup grated cheese, choose lower fat varieties like Edam

1/4 cup crushed weetbix

1 tomato, sliced
