Kumara and banana salad
Preparation time: 20 minutes
Served warm or cold, this is a tasty filling salad.
Cooking directions
- Put cooked kumara, bananas, peanuts, red pepper and spring onions in a bowl.
- In another bowl, stir together lemon rind, lemon juice, oil, sweet chilli sauce and pepper to make a dressing. Mix well.
- Pour dressing over kumara salad and stir gently so dressing is mixed through.
- Serve. This salad is best eaten relatively soon after making.
To cook kumara:
- Scrub, but do not peel.
- Cut in half and boil or steam until soft but still firm.
- Remove from water and allow to cool.
- Cut into bite-sized chunks.

4 medium kumara, cut into chunks
2 bananas, peeled and sliced
1/2 cup unsalted roasted peanuts, chopped
1 red pepper, chopped
2 spring onions, finely sliced
1 tablespoon lemon rind
1/4 cup lemon juice
2 tablespoons oil
1 tablespoon sweet chilli sauce
2 pinches black pepper
