Preparation time: 30 minutes

An easy, fun way to cook fish. Simply wrap everything in a tin foil parcel, bake in a hot oven and serve.

 

Cooking directions

  • Place one fish fillet in the middle of a piece of tin foil or baking paper.
  • Top fish fillet with some kumara slices, green peppers, carrots and leeks.
  • Sprinkle with paprika.
  • Wrap in tin foil. Repeat for each fish fillet.
  • Bake in oven for 20 to 25 minutes at 180 degrees or until fish is cooked (fish is cooked when it is white all the way through).
  • When ready, unwrap and enjoy.
  • Serve with salad or coleslaw.

Tip:

  • Use any veggies you have on hand, eg courgette, spinach or silverbeet, tomato, mushrooms or onion.
  • Fresh fish can be expensive, but is often on special. Keep an eye out for specials at your supermarket or market.
  • Frozen fish fillets, such as Dory or Hoki fillets (not crumbed), work well too. Look out for these in the frozen foods section of your supermaket.
  • Try other herbs and spices instead of paprika.

6 fish fillets

2 medium kumara, scrubbed and thinly sliced

1 teaspoon paprika

2 green peppers, cut into strips

3 carrots, cut into strips

1 leek, thinly sliced (or onion works well too)
