A tasty after-school snack. Use any combination of your favourite fillings. We have told you our favourites, but get creative and invent your own!

 

Cooking directions

  • Prick each potato with a fork a few times.
  • Microwave whole, unpeeled potatoes on high power for 3 to 4 minutes per potato. The potato is cooked when it is soft to touch.
  • Allow to cool for a few minutes.
  • Cut each cooked potato in half and scoop out the inside to make a space for the filling.
  • Mash potato with your favourite fillings.
  • Scoop filling back into potato skins.
  • Microwave filled potatos for a few minutes until hot.
  • Serves 8 as a snack or 4 as a meal.

Our favourite fillings:

  • Baked beans - mash potato with 1 tin of baked beans and 1/2 cup grated Edam cheese.
  • Cheese and corn - mash potato with 1 tin of creamed corn and 1/2 cup grated Edam cheese.
  • Cheese and pickle - mash potato with 1/2 cup tomato relish and 1/2 cup grated Edam cheese.
  • Tuna - mash potato with drained, tinned tuna, tomato relish and 1/2 cup grated Edam cheese.
  • Ham and pineapple - mash potato with chopped ham, drained tinned pineapple, and 1/2 cup grated Edam cheese.
