Preparation time: 20 minutes

Mini pizzas are an oldie but a goodie. This is a tasty variation using sliced French stick as the base will be a hit with whanau and friends.

 

Cooking directions

  • Heat oven to 200 degrees.
  • Mix chopped tomatoes, green peppers, ham, pineapple and cheese together in a bowl to make the pizza topping.
  • Cut French stick into slices about 2 cm thick.
  • Place slices on oven tray and cook for about 5 minutes until lightly browned.
  • Spread bread slices with pasta sauce, then spoon on pizza topping.
  • Bake in oven for about 10 or 15 minutes until golden and heated through. 
  • These are tasty served hot or cold.

Tip:

  • Choose any combination of your favourite toppings eg, chopped red onion, sliced mushroom, canned corn, grated courgette, fresh herbs.

Ingredients

2 French sticks

1 jar tomato-based pasta sauce (500 gram jar)

6 medium tomatoes, chopped

2 green peppers, chopped

400 grams chopped ham

2 cans crushed pineapple in juice (440 gram can), drained

2 cups grated cheese, choose a lower fat cheese such as Edam
