This coleslaw classic is an old favourite. Great for summer BBQs or in sandwiches, wraps or burgers.

 

Cooking directions

  • Place cabbage, spring onions and mint in a large bowl.
  • To make dressing, mix together oil, lemon juice, cumin and brown sugar.
  • Pour dressing over salad and mix thoroughly.
  • Lightly toss through the tomato wedges.

2 spring onions, sliced

1/4 cup finely chopped mint

2 tablespoons oil

2 tablespoons lemon juice
