Preparation time: 20 minutes

Fish can be a cheap, easy and filling meal - look out for specials at the supermarket. Frozen hoki or dory fillets are also a good alternative to fresh fish - these are in the frozen food section of the supermarket. A healthy and tasty alternative to deep-fried fish.

 

Cooking directions

  • Rinse fish fillets in cold water.
  • Cut fish into even-sized pieces.
  • Mix egg and milk in bowl.
  • Mix breadcrumbs, lemon pepper and parmesan.
  • Set up in preparation to coat fish - a dinner plate with the flour on it, then the bowl with the egg mixture, then a dinner plate with the breadcrumbs.
  • Coat fish in flour, then dip in egg mixture, then coat with breadcrumbs.
  • Place fish pieces on an oven tray that has been covered with tinfoil or baking paper.
  • Bake in oven for 10 minutes at 220°C or until golden brown and cooked through (turn over half-way through cooking).
  • Serve with salad vegetables and our crunchy potato wedges.

Try:

  • Making fish burgers - a tasty alternative to a beef burger.
  • Making fish nuggets by cutting fish into bite-sized pieces.
  • Using chicken instead of fish. Make chicken nuggets by cutting chicken breast into bite-sized pieces. Cooking chicken takes a bit longer than fish. Cook for about 20 minutes or until juices run clear and chicken is cooked through (not pink in the middle).
  • Serving with steamed seasonal vegetables and carrot, parsnip and potato mash.
  • Using dried mixed herbs instead of lemon pepper seasoning.
  • Making breadcrumbs out of toasted stale bread (use a food processor to chop into breadcrumbs). Save crusts from the end of loaves and freeze so you can make a big batch of breadcrumbs. Store in an air-tight container.

500 grams fresh fish fillets

2 tablespoons flour

1 egg, beaten

2 tablespoons low-fat milk

1 cup breadcrumbs

1 tablespoon lemon pepper seasoning, optional

1/2 cup grated parmesan cheese, optional
