A simple and delicious vegetable dish.

 

Cooking directions

  • Heat the oil in a large non-stick frying pan or wok.
  • Add the sliced carrots and finely chopped courgettes.
  • Stir-fry for 4 to 5 minutes or until the carrot is tender but still slightly crisp.
  • Add the orange rind and juice. Mix well.
  • Serve immediately.

Ingredients

1/2 tablespoon oil

3 carrots

3 courgettes

3 tablespoon orange juice

1 tablespoon grated orange rind

1 pinch ground black pepper
