Chilli bean wraps
Preparation time: 25 minutes
Fast easy family meal. You don't need to follow the recipe exactly - use whatever vegetables you have on hand (canned, fresh or frozen).
Cooking directions
- Heat oil in non-stick frying pan. Cook onion, garlic, celery, leek and carrot for 10 minutes (until soft and cooked through).
- Add chilli beans, tomatoes and corn, and cook for another 5 minutes.
- Warm tortillas in microwave or oven (follow the directions on the packet).
- Fill tortillas with bean filling, lettuce, tomato, avocado, grated cheese and a little sour cream. Or instead of lettuce and tomato try our tasty winter slaw.
- Roll up, eat and enjoy!

2 teaspoons vegetable oil
1 onion, chopped
2 cloves garlic, crushed
1 stalk celery, chopped
1 leek, cut in half length ways then sliced
1 carrot, grated
1 tin chilli bean (420 gram tin), 420 gram tin
1 tin chopped tomatoes (410 gram tin), 420 gram tin
1 can whole kernel corn (330g can), 420 gram tin, drained
1 lettuce, shredded
3 tomatoes, chopped
1 avocado, mashed (optional)
1 cup grated cheese
1 cup low-fat sour cream
6 tortillas, wholemeal wraps or burritos
