Preparation time: 25 minutes

Fast easy family meal. You don't need to follow the recipe exactly - use whatever vegetables you have in the cupboard, freezer or fridge.

 

Cooking directions

  • Heat oil in non-stick frying pan.  Cook onion, garlic, celery, leek and carrot for 10 minutes (until soft and cooked through).
  • Add chilli beans, tomatoes and corn, and cook for another 5 minutes.
  • Warm tortillas in microwave or oven (follow the directions on the packet).
  • Fill tortillas with bean filling, lettuce, tomato, avocado, grated cheese and a little sour cream.
  • Roll up, eat and enjoy!

2 teaspoons vegetable oil

1 onion, chopped

2 cloves garlic, crushed

1 stalk celery, chopped

1 leek, cut in half length ways then sliced

1 carrot, grated

1 tin chilli bean (420 gram tin), 420 gram tin

1 tin chopped tomatoes (410 gram tin), 420 gram tin

1 tin whole kernel corn, 420 gram tin, drained

1 lettuce, shredded

3 tomatoes, chopped

1 avocado, mashed

1 cup grated cheese

1 cup low-fat sour cream

6 tortillas, mountain bread or burritos
