Preparation time: 20 minutes

This is quite cheap because you don't need much meat at all – in fact, it’s fine to miss it out completely. Use whatever vegetables you have on hand.

Cooking directions

  • Remove any skin or fat from the cooked chicken and break into bite-sized pieces.
  • Place instant noodles in a large bowl and cover with boiling water. Leave for 2 to 3 minutes until softened. Drain.
  • Heat the water in a large frying pan or wok. Add garlic, ginger, cauliflower, broccoli, carrot and celery.
  • Stir-fry for 4 to 5 minutes or until the vegetables are beginning to soften. Keep the pan moist by adding a little more water if needed.
  • Add noodles, cooked chicken and soy sauce to pan. Mix well.
  • Heat gently until all warmed through.

Try:

  • Finely chopped cooked sausage, ham or bacon instead of chicken.
  • Leaving out the noodles and serving with rice or stuffed in pita pockets.
  • Leaving out the meat and having vegetable chop suey.
