Chicken chop suey
Preparation time: 20 minutes
This is quite cheap because you don't need much meat at all – in fact, it’s fine to miss it out completely. Use whatever vegetables you have on hand.
Cooking directions
- Remove any skin or fat from the cooked chicken and break into bite-sized pieces.
- Place instant noodles in a large bowl and cover with boiling water. Leave for 2 to 3 minutes until softened. Drain.
- Heat the water in a large frying pan or wok. Add garlic, ginger, cauliflower, broccoli, carrot and celery.
- Stir-fry for 4 to 5 minutes or until the vegetables are beginning to soften. Keep the pan moist by adding a little more water if needed.
- Add noodles, cooked chicken and soy sauce to pan. Mix well.
- Heat gently until all warmed through.
Try:
- Finely chopped cooked sausage, ham or bacon instead of chicken.
- Leaving out the noodles and serving with rice or stuffed in pita pockets.
- Leaving out the meat and having vegetable chop suey.

400 grams lean chicken, cooked
2 packets instant noodles, (throw away the flavour sachet)
2 tablespoons water
2 cloves garlic, peeled and finely chopped
2 teaspoons pre-prepared crushed ginger
1 cup cauliflower, chopped
1 cup broccoli, chopped
1 carrot, sliced
1 stick celery, sliced
2 tablespoons low-salt soy sauce
