Char-roasted vegetable mix
Preparation time: 45 minutes
The intense flavour of roasted vegetables with lemon and garlic is delicious. Give this one a try.
Cooking directions
- Turn the oven on to 200 degrees.
- Put the prepared vegetables in a baking dish.
- Combine the garlic, oil, lemon juice and some ground black pepper. Pour over the vegetables.
- Bake for around 30 minutes or until the vegetables are tender and golden brown.
Try:
- On a BBQ in summer. Cook on a medium to hot barbeque plate for about 10 to 15 minutes or until tender.
- Using other vegetables if they are cheap - sliced eggplant, diced pumpkin or chopped carrot.

2 small kumara, chopped into bite-size pieces
2 onions, cut into wedges
2 green peppers, deseeded and sliced
3 courgettes, sliced
2 cloves garlic, crushed
1/4 cup olive oil
1/4 cup lemon juice
1 tablespoon brown sugar
