BBQ vegetables
Preparation time: 20 minutes
Traditionally we serve salads at BBQs, but cooked vegetables make a delightful change. Try a BBQ vegetable platter with some or all of the following vegetables. Add extra flavour with garlic, ginger or chilli.
Cooking directions
- Brush prepared vegetables with a little oil.
- Onion wedges or rings - separate layers, place on solid BBQ plate, stir-fry for 4 to 5 minutes until cooked.
- Tomato halves - place face down on BBQ, cook for about 3 or 4 minutes until heated through, turn over and sprinkle with black pepper.
- Pepper strips - place on hot BBQ plate, turn frequently, cook for about 3 or 4 minutes.
- Courgette halves - place on hot BBQ plate, turn frequently, cook for about 3 or 4 minutes.
- Kumara chips - place kumara slices on BBQ plate, turn once during cooking, cook for about 10 to 12 minutes.
Other vegetables that work well on a BBQ are: fresh asparagus, baby corn, mushrooms and yams. Basically if you can stir-fry it, you can BBQ it! Enjoy.
