BBQ vegetables

Preparation time: 20 minutes

Traditionally we serve salads at BBQs, but cooked vegetables make a delightful change. Try a BBQ vegetable platter with some or all of the following vegetables. Add extra flavour with garlic, ginger or chilli.

 

Cooking directions

  • Brush prepared vegetables with a little oil.
  • Onion wedges or rings - separate layers, place on solid BBQ plate, stir-fry for 4 to 5 minutes until cooked.
  • Tomato halves - place face down on BBQ, cook for about 3 or 4 minutes until heated through, turn over and sprinkle with black pepper.
  • Pepper strips - place on hot BBQ plate, turn frequently, cook for about 3 or 4 minutes.
  • Courgette halves - place on hot BBQ plate, turn frequently, cook for about 3 or 4 minutes.
  • Kumara chips - place kumara slices on BBQ plate, turn once during cooking, cook for about 10 to 12 minutes.

Other vegetables that work well on a BBQ are: fresh asparagus, baby corn, mushrooms and yams. Basically if you can stir-fry it, you can BBQ it! Enjoy.

1 onion, cut into wedges or rings

3 tomatoes, cut in half

2 green peppers, cut lengthways into quarters

3 courgettes, cut in half lengthways

1 medium kumara, cut into 1/2 cm thick slices

2 tablespoons oil
