Alex's apricot chicken salad
Preparation time: 15 minutes
A tasty way to get a few greens into the kids. This salad can be a main for 4 people or a side for 8.
Cooking directions
- In a large salad bowl, mix together salad greens, cucumber, red pepper, chicken, apricots and chickpeas.
- To make dressing, mix together fruit chutney and vegetable oil.
- Gently stir dressing through the salad.

Ingredients
1 bag green salad mix
1/2 cucumber, chopped
1 red pepper, chopped
400 grams cooked chicken, eg leftover chicken or shredded chicken from supermarket deli
3/4 cup dried apricots, chopped
1 can chickpeas (420 gram can), drained and rinsed
2 tablespoons fruit chutney
2 tablespoons olive oil
